冬天限定 零失敗 秘製 胡椒豬骨煲(大概4人份)White Pepper Pork Bones Soup



呢排天寒地凍

基本上日日唔係打邊爐就係乜煲物煲

今日要做既係百搭既胡椒豬骨煲

你可以用黎做邊爐湯底,或者好似我咁簡單做齋食個煲連湯飯

凍冰冰飲一啖滿滿胡椒辛辣既豬骨湯,真係超級爽!



材料

豬湯骨/豬筒骨 1350g (2斤半左右/超市 3pack的量) Pork Bones 1350g

雞腳 7-8隻 Chicken Feets 7-8

白胡椒 2大匙 (30g) White Pepper 2 tbsp

薑 7-8片 Ginger 7-8 Slices

蒜頭 5-6瓣 Garlic 5-6 

粟米 2條 Corns 2

白蘿蔔 1個 white Radish 1

唐芹 2棵 Chinese Celery 2

蔥 2棵 Scallion 2



豬骨先凍水下鍋,用最小小小火煮40分鐘出血(跑活水)

Boiled the pork bones in lowest heat for 40mins (cleaning the blood)


隔水後逐件清洗乾淨

Clean up the pork bones 


雞腳洗淨剪去腳指甲,沸水下鍋,煮2分鐘撈起備用 

Wash the chicken feets and cut off the nail

cook for 2 mins in boiled water


薑洗淨,去皮切片

Sliced and peeled the ginger


蒜頭去皮

Peeled the garlic


白胡椒先略略盅碎,入茶袋或煲湯魚袋

Slightly smashed the white pepper and put it in a tea bag or a soup bag


豬骨先白鑊煎至乾身,帶一點點焦黃,夾起備用

Fried the pork bones without oil until they become and dry and golden brown,Pick up and set aside


薑片和蒜頭亦白鑊煎至有一點點焦

Fried the ginger and garlic without oil until they become golden brown


下豬骨、雞腳及胡椒包,再沖入沸水至沒頂

Put the pork bones , chicken feets and white pepper bag in and add boiled water


大火煮沸,轉中火煮1小時 (如用明火,水量要再加碼)

Boil on high heat, turn to medium heat and cook for 1 hour (if using flame cooking, add more water)


粟米、白蘿蔔洗淨,去皮切件

Wash the corns and radish, peeled and cut into pieces


唐芹、蔥洗淨去根,切段

Wash the chinese celery and scallion, cut off the root and cut into sections


煮好後下鹽調味,先下3-4小匙 ,試味後再加

When the soup is done,  add salt 


再拿起胡椒包

take off the pepper bag


之後可原鍋加入粟米、白蘿蔔

Put the corns and radish in, cook for 20 mins in low heat 


也可另下想用的鍋子,再加入粟米、白蘿蔔,煮沸後轉中小火煮20分鐘


之後下唐芹及蔥,關火焗5分鐘即可

Put the chinese celery and scallion, boiled in high heat, turn off the heat and place for 5 mins.
