材料 Ingredients
紅菜頭 1個(140g) Beetroot 1 (140g)
高筋麵粉 250g Strong flour 250g
乾酵母 3g quick yeast 3g
牛油 10g butter 10g
糖 10g sugar 10g
鹽 2g salt 2g
水 2大匙(30ml) Water 2 tbsp(30ml)
糖水 Water Bath
水800g Water 800g
砂糖10g Sugar 10g
將紅菜頭先切頂和底部,去皮
Peeled the beetroot and cut off the top and bottom
切粒後用手提攪拌器打成泥
After dicing, pureed in a hand mixer
將高筋麵粉、乾酵母、糖、鹽用慢速(3度)打成團
Put the Strong flour, quick yeast, sugar and salt into kitchen mixer
and mix in a slow speed to a dough
*乾酵母與鹽記得分開兩邊,兩者直接接觸,酵母會死的
*Remember to separate the dry yeast and salt. The yeast will die if it touches the salt directly
按麵團的狀態分兩次加入水,每次一大匙
Add water at twice ,1 tbsp each time
成團後可以將牛油加入
Add butter into the dough
之後轉中慢速(4度)打7分鐘,麵團開始有彈性及表面光滑即可
Then beat the dough around 7 minutes in a mid-slow speed until it becomes stretchy.
將麵團滾圓收口,蓋上濕布一次發酵30分鐘(想軟身一點就發酵40分鐘)
Round the dough and cover with wet cloth and make the first fermentation for 30 minutes
(if you want it to be softer, leave it for 40 minutes)
將麵團排氣,將麵團分成六分
Exhaust the dough, and cut into 6 pieces
之後搓圓收口,蓋上濕布靜置10分鐘
round it to small dough, cover with wet cloth and rest it for 10 minutes
*如果麵團太粘的話可以雙手沾少少油搓
*If the dough is too sticky,place a small amount of oil in your hands and rub it all over
先捍成長方形,將你喜歡的餡料鋪上,這次我做了肉鬆餡及芝士莎樂美腸餡
Roll the dough into a flat shape. Add your favorite fillings
I made a pork floss with Mayonnaise fillings and Salami with cheese fillings in this time
卷成條後,收口位要用手粘合
After rolling into a strip, the closing position should be glued by hand
之後收口朝上,將一側捍開
The cut side facing upwards and roll up one side to be thinner
之後兩端接合,將捍開一側包著細端一側
Connect two side and make it into a circle,
One side is wrapped around the thinner side
翻回正面,每一個獨立放上小烘焙紙
Transfer to baking paper
之後二次發酵30分鐘
make the second fermentation for 30 minutes
快完成發酵時,可以準備糖水
Prepare the water bath
將水加上糖煮沸後,轉最小小小小火
Bring water and sugar to a boil, turn the heat to low
之後將氣炸鍋先預熱200度
Preheat the air fryer to 200 degrees
將發酵好的麵團連同烘焙紙放入糖水中,每面煮10秒鐘,煮時弄走烘焙紙﹐烘焙紙留用
Put the fermented dough with baking paper into the boiled water, cook for 10 seconds on each side, also remove the baking paper in the water(Keep the baking paper)
之後將煮好的麵團放回烘焙紙
put the dough back on the baking paper
煮好所有麵團,可以在表面灑上香料或芝麻區分味道
sprinkle some spices or sesame over the top if you like
放入氣炸鍋
200度15分鐘就ok了!
Put into the air fryer , 15 minutes in 200C
