上湯龍蝦伊麵 (三至四人份)Fried Lobster in Broth with. E-Fu Noodle

終於買左兩隻,整上湯伊麵底
2個人食飽到上心口,齋食龍蝦都爭d買唔晒
做法相當簡單,團年果時煮就最好喇!
材料 Ingredients
西澳龍蝦 2隻 Lobster 2
伊麵(大) 1餅 E-Fu Noodle 1
清雞湯 500ml Chicken Broth 500ml
薑 6-7 片 Ginger 6-7 Slices
蔥 2棵 Scallion 2
生粉水
生粉 1大匙 Cornstarch 1 tbsp
水 150ml左右 Water 150ml
煮法
薑洗淨去皮,切片備用
Sliced and peeled the ginger
蔥洗淨,切去根部後切段備用
Wash the scallion, cut off the root and cut into sections
龍蝦沖洗一下,先剪走蝦鬚
Rinse the lobster, Cut the antenna of the shrimp first
之後先分開頭和身
then separate the head and body
蝦頭切半備用
Cut the head in half,
蝦身先切半,去掉蝦腸
cut the body in half, remove the intestines
剪走蝦腳,再剪開幾件
cut the feet and then cut into a few pieces
龍蝦灑上一點點鹽,再撲上生粉
spread with salt and cornstarch
用一個小鍋,下大概1-2飯碗油燒紅,之後將上了生粉的龍蝦逐少走油
Fried the lobster in a small pot with some oil
龍蝦頭要炸久一點,十多秒至金黃
The lobster head should be fried a little longer until it become golden brown
龍蝦身很快,幾秒就好
Other parts just need to fry a few second
之後撈起備用
另備一炒鍋燒煮水,下伊麵煮十幾秒,一見軟身即時撈起備用
Boiling a pot of water, put the E-Fu Noodle in for a few second, pick up immediately when you see it soften.
之後用剛炸過龍蝦的油,下一大匙起鍋
Use the lobster oil to make the Wok become heat
之後下薑、蔥炒香
stir fried ginger and Scallion
下清雞湯煮沸,之後加2小匙糖及1.5小匙鹽調味
add the Chicken Broth, seasoning with 2 tsp sugar and 1.5 tsp salt
記得試一試味!
Remember to tasting
之後下龍蝦煮2分鐘左右
put the lobster in cook for 2 minutes when the broth boiled
下生粉水煮勻,夾起龍蝦
add the mixture of Cornstarch and water, and take out the lobster first
下伊麵炒勻,上碟鋪底,再放上龍蝦即可
Stir fry the E-Fu Noodle, put on the bottom, and put the lobster on it.
