尖椒皮蛋 Century Egg with Hot Pepper
呢個都係你地提議我做既!
雖然我平時去譚仔,有時忍唔到口都會叫黎食
但自己做真係超易,10分鐘就得喇!
最難(其實都唔難)只係切皮蛋,有時太糖心就會痴刀有人會教用線切,
我怕麻煩,其實將刀抹少少油就會切得靚仔架喇!
呢個我鍾意放工自己食麵既時候做小食,
但真係唔好食太多!
始終都係重金屬~一個月食一、兩次好喇!
材料:
皮蛋 2隻
蒜頭 3瓣
指天椒 2隻
芫茜 2棵
醬汁:
鹽 半小匙
糖 半小匙
胡椒粉 半小匙
麻油 1小匙
紅油 1小匙(紅油我是自家製的: 可用花椒油或是花椒油代替)
醬油 1大匙
鎮江醋 1 大匙
Ingredients
Century eggs 2
minced garlic 3 pcs
Chili pepper 2
Coriander 2 bunches
Sauces
Salt 1/2 tsp
Sugar 1/2tsp
Pepper 1/2tsp
Sesame Oil 1tsp
Peppercorn chili oil or chili oil 1tsp
black vinegar 1tbsp
soy sauce 1tbsp
做法
蒜頭去皮切蓉
Peel the cloves of garlic and minced
指天椒切碎
芫茜洗淨切碎
Minced the chili pepper and coriander
醬汁料全部拌勻備用
Mix the sauce ingredients in a bowl.
皮蛋去泥後洗淨,再剝殼
Peel the century eggs
廚房紙加點油,抹在小刀上,在切開皮蛋,我的習慣是先再半,再開三,一隻皮蛋開六瓣
Put a little bit of oil on a paper towel and wipe the knife
Use the knife to cut the century eggs into sixths and put on the plate
之後燒熱鍋,小火炒香蒜蓉和指天椒,再將醬汁加入拌勻煮熱
Heat up a pan, add some oil and cook the minced garlic and chili until you can smell it,
then add the sauce ingredients and cook for a while
皮蛋先排好在碟上,灑上芫茜碎,再淋上醬料即成
Put the sauce and minced coriander on the century eggs
Done and Enjoy it!
